For sure, make the wheel aluminum oxide, 60 grit if you have but one wheel, and a hardness in the range of H or I, vitrified bond. Hardness in the JK range will work, but likely grind somewhat hotter. Do not buy silicon carbide, which isn't suited for grinding HSS.

If you look at a ground edge under high magnification, the edge will look rather like a serrated knife. No burr, just a ragged look that gets smoother with finer grit wheels. That sort of edge will do well for rough turning.

When I looked up the heat treating of HSS I found it to be way beyond what we can do at home without a custom heat treating furnace.
